All I can say is YUM! I wanted to make something quick and easy for lunch which didn’t require chopping and cooking a bunch of ingredients. So I made these SANDWICHES! This is so simple and the combination of carrots and chickpeas is super delicious and can be eaten on crackers, in a lettuce wrap or on toasted bread. I served them on toasted Hawaiian bread with a side of sea salt & cracked black pepper chips. You can dress this up with a few slices of red onion, cucumber, radishes or even capers, it would be delicious! Since I didn’t have any of those, it meant a trip to the farmers market this morning.
A TRIP TO THE SATURDAY MORNING FARMERS MARKET
One of my favorite things to get is the fresh pressed sugarcane juice with ginger and tahitian lime! Sounds like it would be too sweet, but it really isn’t. Fresh sugarcane juice actually has many health benefits. With only a 15% sugar content, the rest of it is water which is packed with nutrients, vitamins, minerals, fiber and chlorophyll. Yup, I’m totally addicted!
Along with beautiful produce, eggs, honey, juices and baked goods you can also get a fresh coconut. Coconut Willie will open one up for you so you can drink the coconut water straight from the shell! Another extremely healthy beverage!
- 1 can organic chickpeas, drained & rinsed
- 2 carrots, peeled and shredded
- 1T white wine or apple cider vinegar
- 3T mayonnaise (I used vegannaisse)
- ½t sea salt
- ¼t cracked black pepper
- 1T whole grain mustard
- 1t hot sauce
- lettuce leaves
- 8 slices of your favorite bread
- optional
- sunflower seeds
- sliced radishes
- sliced cucumbers
- sliced red onion
- capers
- crackers
- whole lettuce leaves
- In a food processor or using a potato masher, pulse or mash the chickpeas until they are coarsely ground.
- In a large bowl, mix all of the ingredients together. Taste for seasoning.
- Assemble the sandwich:
- Toast the bread and spread with a little mayonnaise. Add the lettuce leaves and any optional topping that you like. Add a scoop of the chickpea carrot salad and top with the second slice of bread.
