If you happen to have extra avocados laying around, like I did, you can whip up this delicious dip in a matter of minutes. All you need is a few other ingredients and voila! You’ll have a tasty dip. Then if you have any left over you can use it as a spread for a sandwich the next day.
These avocados were ready to be eaten. They were the ones that my friend had harvested from his tree. I said I would make some guacamole with them, but then I thought “how about a dip?”.
About 5 minutes later, we had a creamy dip that we devoured with tortilla chips.
creamy avocado dip
makes enough for 3-4 people
ingredients:
everything
3 ripe avocados
2 scallions, white and green parts
1 lime
1/4c sour cream
1/2c fresh cilantro
1 small jalapeño, seeded
1/2t sea salt
how to:
Scoop out the avocados into the bowl of a food processor fitted with an S-blade and add the chopped scallions, lime juice, sour cream, cilantro, jalapeño and salt. Blend until creamy. You may need to scrape down the sides of the bowl and pulse a few more times. Season to taste with salt + pepper. Serve in a bowl along with tortilla chips.
