The weather has been amazing the past few days. I think the rainy days are past us, at least they are for now. It was quite warm with a wonderful breeze coming down the mountain so it was a perfect evening to sit outside and enjoy the sunset.
I’m starting to really get into adding fresh mint to different things. I love it chopped up in my salads, on my roasted veggies and in this drink. We have a huge pot of it (thank you Terri!) and it grows like crazy, so I always have plenty of it to use.
I muddled the cucumber, mint and ginger and made a sugar rim on my glass (yum).
cucumber + ginger + mint
makes 1 drink
ingredients:
everything
1/2″ piece fresh ginger, peeled
1″ piece cucumber, peeled & diced
4-6 leaves fresh mint
2oz vodka
1/2oz simple syrup
garnish
sugar for rim
1 sprig fresh mint
slices of cucumber
how to:
To create the sugared rim, wet the rim of your glass with a piece of cucumber and dip it into some sugar. Set aside.
In the bottom of a cocktail shaker, I used a mason jar, add diced cucumber, mint leaves and ginger. Muddle until the cucumber and ginger have broken down and the mint becomes fragrant. Then add simple syrup and vodka (you can certainly leave out the vodka and add some fresh lemon juice or seltzer). Add ice, cover and shake for 30 seconds. Strain into an ice filled glass.
