Winter is in the rear view mirror. The weather has warmed up after that crazy cold front and I wanted to make a refreshing drink to have in the afternoon. This might be the one.
fresh mint from the garden and limes from the yard…does it get any better than that? ah, yes! local honey, pineapple juice and coconut milk, of course!
muddle.pour.shake.strain

makes 4 drinks
ingredients:
everything
1c fresh pineapple juice
1/2c coconut milk
a big handful of fresh mint
juice of 1-2 limes about 1/4c
2 spoonfuls honey
2 cups of ice
how to:
in the bottom of a shaker or mason jar muddle the mint and the lime juice. Add the coconut milk, pineapple juice, the honey and 1 cup of ice . cover and shake for 30 seconds. Fill glasses with remaining ice. Strain into glasses. Garnish with fresh mint.
