I love hummus!. Besides being super easy to make, it’s tasty and it’s nutritious. Most likely you have all of the ingredients already in your pantry & fridge. I get so many fresh juicy lemons here and I love to use them in as many dishes as I can! I serve this hummus with some fresh vegetables and warm pita wedges.
spicy lemon hummus
ingredients
topping
olive oil
2T pine nuts, lightly toasted
1/4t sweet paprika
set aside
everything else
1 can organic chickpeas, drained & rinsed
2T organic tahini
juice of 1-2 lemons, about 1/4c
handful of fresh cilantro
2 cloves fresh garlic
1/2t chile powder (I prefer ancho)
1/8t cayenne or 1 seeded jalepeno or serrano
1/4t ground cumin
salt to taste
3T extra virgin olive oil
how to:
In a food processor fitted with an S-shaped blade add all of the ingredients except for the olive oil and the toppings. Blend until everything is incorporated and almost a smooth consistency. Slowly add the olive oil while its processing and blend until smooth. You may need a bit more liquid so adjust the amount of oil if you feel it’s too thick. Taste for seasonings and adjust ingredients as necessary.
Transfer into a pretty bowl and top with olive oil, toasted pine nuts & paprika. Serve with fresh cucumbers, carrots, radishes, celery and warm pita wedges.
