I had some extra flour tortillas that I made yesterday so I made some lentil tacos for lunch. I have been making lentil tacos for as long as I can remember. I always use these tiny French Puy lentils which are perfect because they hold their shape and are crunchy and hearty. Oh and this sauce! Can you believe that it’s made with cashews? I think it’s going to be my new go to sauce for almost everything! It’s delicious.

These tacos are also delicious eaten at room temperature. If you happen to have a ripe avocado, that would be great on these too.

Ingredients
- lentils
- 1c Puy lentils
- 2c vegetable stock
- sauce
- 1c raw cashews
- 1c warm water
- 1t sea salt
- 1t smoked paprika
- 1T fresh lemon juice
- 1T avocado oil
- pecans
- 1c raw pecans
- 1T tamari
- ¼t pink himalayan salt
- garnish
- fresh cilantro
Instructions
- Cook the lentils in the vegetable stock for about 30 minutes. They should absorb almost all of the ager and be al dente.
- pre heat oven to 350.
- Toss the pecans with the tamari and the salt and spread out onto a baking sheet lined with parchment paper. Bake for 5-7 minutes until the pecans are crunchy. Check them half way through and don't let them burn. Remove and set aside.
- For the sauce, blend all of the ingredients in a high speed blender until completely smooth. If it seems too thick, add more water. Check for seasonings and adjust. You may like it to be more smoky.
- Heat up the tortillas in the hot oven for 2 minutes. Place them onto a plate and fill each one with the cooked lentils. Top with the pecans and drizzle with the sauce. Garnish with some fresh cilantro.
Notes
If you don't like smoked paprika, you can definitely use sweet paprika. It will be just as delicious.
