Oh my gosh! These tacos are nothing short of AMAZING! Smoky, spicy roasted cauliflower with a creamy cabbage slaw…it doesn’t get any better than this combination. The creaminess of the cool cabbage slaw works perfectly with the slight spiciness and smoky flavor of the hot roasted cauliflower. These will get gobbled up fast so make sure you are ready to make at least 4 tacos for each person. We are hooked and I think you will be too.
Even if you think you don’t like cauliflower, give these a try. I bet you’ll change your mind after eating these. They are light and super tasty and you won’t even know you’re eating cauliflower.

- 1 small head cauliflower, trimmed and cut into florets. about 2-3 cups
- 1 small white onion, diced
- ¾c beer or ginger ale
- ¼c vegetable stock
- 1T hot sauce (use your favorite, I use cholula)
- 2t tamari
- 1T fresh lime juice
- 2 cloves garlic, minced
- 1T avocado oil
- 1t smoked paprika
- 2t cumin
- 2t chili powder
- ½t salt
- 1t garlic powder
- corn tortillas
- fresh cilantro
- fresh lime

- Cut the cauliflower into florets and dice the onion, then set aside
- preheat oven to 400.
- in a sauce pan, heat the stock, beer, garlic, tamari, hot sauce and lime juice. Add the cauliflower and simmer for 3-4 minutes, making sure to press down the cauliflower into the hot liquid.
- While the cauliflower is cooking, mix the dry spices along with the avocado oil in a bowl.
- With a slotted spoon remove the cauliflower from the pot and place into the bowl with the spices. Add the diced onion.
- mix well until everything is coated.
- Spread out onto a baking sheet and roast in the oven for 25-30 minutes. Check half way through and mix the cauliflower so it will brown evenly.
- Heat the tortillas on a baking sheet or directly on the oven rack for 3-4 minutes. If you have a toaster oven that would be better since the oven might be too hot.
- Assemble the tacos. Spoon about ¼c of the roasted cauliflower and onion onto a tortilla then top with ¼c of the slaw, fresh cilantro and a squeeze of fresh lime.
