It’s HOT outside! I mean really really hot. We have been eating so much watermelon to cool us down and hydrate us. We slice it up and take it to the beach…and after a long swim, it tastes so good! The other day I bought what I thought was a regular size watermelon and after I cut into saw that the rind was not as thick as I thought which meant we had way more than we could eat in a day or two. I thought about making watermelon juice, like my mom makes, but we wanted something really cold and refreshing. GRANITA! Freeze the juice, of course
See how thin the rind is? This was a perfect watermelon, bursting with color and hardly any seeds. Those little white seeds are soft and you don’t even notice them.
Cut the watermelon into big pieces and remove the rind. Add as much as you can to your high speed blender along with the fresh lime juice and sugar and blend it up. Half of the watermelon I bought made 15 cups of juice which fit perfectly into a 9×13 baking dish.
Pour the juice into a baking dish and carefully place it into your freezer. Most of your work is done. Now you’ll just have to wait and scrape and wait some more…repeating this 3 times. Then about 9 hours later you will have the most delicious refreshing granita…ever! Believe me, it’s worth it!
- ½ medium watermelon, rind removed (about 24 cups)
- 1 lime, juiced
- ¼c organic sugar
- Blend the watermelon, lime juice and sugar in batches in a high speed blender. You may have to pour the juice into a large bowl so that you can mix the batches together.
- Pour the juice into a 9x13 freezer proof baking dish and place it carefully into the freezer. Make sure that you can remove out easily and it is level. I didn't cover it, but you can with plastic wrap if you want to.
- hours later, remove it and scrape the top only with a fork. You will notice that the edges and corners will be more frozen. Try to only scrape the top layer. It will start to look like granita. Don't worry the parts that you scrape will stay that way...amazing, right?
- Put the pan back into the freezer and repeat this 2 or 3 more times, every 3 hours until all of the juice has frozen.
- Scoop out and serve.
*you can definitely make less in a smaller pan and it will take less time too
